Black Garlic and Dark Ale Beer-Infused Spread

Black Garlic and Dark Ale Beer-Infused Spread
A bold, umami-rich spread that brings together the deep sweetness of locally curated black garlic and the intense character of Wellington’s Imperial Stout.
Slow-aged garlic develops soft, jammy flavours of molasses, dark chocolate, and dried fruit, with subtle acidity and savoury hints of balsamic, soy, and tamarind. The Imperial Stout contributes layers of coffee, vanilla, dark fruit, and roasted malt, making this spread earthy, complex, and incredibly indulgent.
Pairing suggestion:
Italian-style charcuterie, rillettes, terrines, and foie gras
Game meats, grilled lamb, or beef tenderloin
Cheeses like creamy blue, aged Gouda, Parmigiano-Reggiano, Pecorino, or even salty feta
Culinary inspiration:
Stir into aioli or mayonnaise for burgers, steak sandwiches, or prosciutto baguettes
Spoon into deviled eggs with cracked pepper and lemon zest
Glaze for roasted mushrooms or vegetables
Try with dark chocolate mousse or cocoa-dusted truffles for a savoury-sweet surprise. Don’t forget to pair with a glass of earthy wine (like a Cabernet Sauvignon, Merlot, or Syrah)

HOW TO STORE BEER JELLIES
Our Beer Jellies are made with natural ingredients and a low quantity of sugar. The texture is like a soft jelly. It gets softer in a warm environment and firmer when stored in the fridge.
Our Beer Jellies are “canned” as recommended for long-term storage (18 months). As a result, you should store an unopened jar standing up in a cool and dark place, away from sunlight and sources of heat. Exposure to light and heat could degrade the jelly quickly, affecting its flavour, consistency, and appearance. The pantry or a cabinet in the kitchen are the best choices.
Once you open the jar, please store the jelly in the fridge.
Remember to seal the jar tightly and put it back into the refrigerator after use. This procedure ensures the jam remains fine for a more extended period and minimizes the chances of microbial contamination that might make it spoil.
After opening a jar of Beer Jelly, our best before date is within two weeks to a month. Our beer jellies can retain their flavour and last up to a few months if properly stored.
