WHO WE ARE & OUR VALUES

Malty & Hoppy Delicacy is a Toronto-based company that uses beer from the best local breweries in Ontario to make delicious Beer Jellies with a French twist. When Françoise Briet founded her company, she was inspired by her French background and love of beer. She strives to use quality ingredients rich in flavours to create a product low in sugar. She takes special care to make sure the Beer Jellies she makes are environmentally sustainable.

 Welcome to Françoise culinary world!

 Toronto is a source of inspiration for Françoise. It is a vibrant city known for its diverse food scene, inspired by culinary traditions and personal stories from all around the world. Françoise has a unique talent for discovering new flavours and new ways of combining food ingredients. She believes that fantastic food is an affordable luxury and gourmandize a delight and a lovely adventure for the locals and the tourists.

WE LOVE LOCAL CRAFT BEER

Ontario's local craft beer reminds Françoise of her Burgundy roots - the culinary and social aspects of cooking and pairing food with alcohol. Craft beers, compared to wine, offer a richer and larger palette of flavours; from tart Sour to fruity Brett Beers, complex IPAs, smoky Porters, rich Stouts, and layered barrel-aged ales. Craft beer is a new territory for exploring unique culinary opportunities.

As a company, we love our local craft breweries in Ontario. They are just as passionate about what they create as we are about the jellies we make. We select local craft beers we love and transform them into Beer Jelly. The process is both complex and straightforward! We respect the hard work of the original brewmasters and try to stay true to the essence of their brew in our products.

Our mandate is to capture the diversity and richness of the local craft beer's flavours in our Beer Jellies to create an exquisite "Produit du Terroir." Our jellies are artisanal in the truest sense of the word. It is an expression of who we are as people in Ontario.

MEET OUR FOUNDER: FRANÇOISE BRIET

“I am French, and now I live in Toronto. I am an entrepreneur, a private chef, and a culinary educator. I have a Ph.D. in nutrition. I was involved in clinical research in metabolic nutrition for decades before changing my career path. I worked in international development in Haiti, Ghana, and Ethiopia, where amazing entrepreneurs inspired me in the food security sector. Then I decided to start my own company and went to business school. I was also a professional chef working for the French consul in Toronto for four years. My life story makes me who I am.”

“I am originally from Beaune in Burgundy - one of the best-known regions in the world for producing elegant wines. Burgundy is also famous for mustard, local alcohol like black currant liqueur, Kir (the Burgundy cocktail), Ratafia (a mixture of Marc de Bourgogne and grape must) and exquisite gastronomy. Beef Bourguignon is now an international classic, elevated by Julia Child into an art form. Burgundy inspired me to explore the art of pairing food with alcohol. I was thoroughly surprised that beer pairs well with various foods, including cheese. This delightful realization gave birth to Malty & Hoppy Delicacy.”

PLAY WITH YOUR FOOD

“Playing with food and flavours is in my genes. I grew up under the influence of two amazing cuisinières - my grandmothers, Lucie and Adèle. Before getting married, my grandmother Lucie was a professional cuisinière in the East of France in a very influential family. She cooked for the prime minister and different ministers. Amazingly, before WWII, she got a job offer as a cuisinière in New York, USA. It was an excellent opportunity for a young 20-year-old woman. Ultimately, she chose to stay in France.

My grandmother Lucie was the French Julia Child. She loved using simple ingredients, quality foods, and a lot of butter and cream (oh my!). Her recipes were perfection!

My grandmother Adèle was a creative person. She loved to try new recipes and design clothes inspired by what she saw in fashion magazines. She particularly loved Coco Chanel and Christian Dior.

She even taught me how to knit, but what was challenging because I am left-handed! Adèle was also a farmer along with my grandfather Paul. They had a big garden, full of flowers and vegetables. They even had an orchard, berry bushes, and a vineyard too! I helped them to harvest the fruits, vegetables and grapes.

“Adèle was the queen of jam and preserves! I can still remember how delicious her raspberry and blackcurrant syrups were. She event made blackcurrant jelly and sour cherry, rhubarb, and apricot jams. I spent much of my time with her in the garden when I visited her during summer break. I helped my grandmother make jam and preserves and cook delicious plant-based meals. As we say in French: La pomme ne tombe pas loin de l'arbre. The apple does not fall far from the tree.

“When I discovered that beer pairs well with cheese, dare I say better than red wine, it was a revelation for a French girl who grew up in Burgundy. That was the beginning of a new adventure for me!

GIVING BACK TO THE COMMUNITY

"The inspiration of two talented grandmothers helped shape me into the woman I am today. My company and work as an entrepreneur are strongly influenced by my French roots and the essence of my worldwide culinary experience.

I am the co-president of the French chapter of Canadian Women in Food (CWIF), an organization that amplifies female voices and celebrates women's entrepreneurship in the food industry.

I strive to encourage French female representation by helping others express their creative ideas and bring diversity to the food industry. I hope to highlight the importance and beauty of our diverse cultures and personal stories so we can all benefit from one another."
