Our company .... how everything started
One year and half ago, I had a revelation when I was enjoying a glass of aged beer at Bellwoods Brewery. Beer can be as delicious as a glass of Burgundy wine!
In more than a year of dedication and enthusiastic efforts, I have learnt so much about craft beer, beer styles and the brewing process. This past year of my life was an interesting experience, not only tasting various kinds of beer but also initiated so many cooking experimentations. More importantly, it has allowed me to meet wonderful brewers, passionate local producers and like-minded individuals.
Malty and Hoppy Delicacy is the synthesis between the influence of my Burgundy roots, my love for craft beers, my French culture valuing local food and gastronomy, my passion for cooking, my creative mindset and my tendency to think outside the box.
What is essential for our company is the importance we place on where our food comes from and what it tastes. We have also the conviction that amazing food is an affordable luxury.
For us, local craft beer is the new food renaissance. Each craft beer has its own unique identity, where it is the expression of each brewer’s personal creativity. Cooking with beer, pairing food with beer is a real gastronomic adventure for us.
At Malty and Hoppy Delicacy, we focus on using Ontario craft beer as well as brewing ingredients and by-products to bring new flavors and exciting small-batch artisan jellies, jams and other delicacies to your table. We love the idea of capturing and cherishing the diversity and complexity of craft beer flavors in our creations. When pairing our products with local craft beer, artisan cheese, cured meat and smoked fish as well as seasonal fruit and vegetable, your taste buds will undergo an unforgettable journey!
Malty & Hoppy Delicacy is a Toronto based eco-social enterprise - we pay special consideration to where our ingredients come from. Our motto is to create happy and delicious food that are healthy and nutritious as well as locally and sustainably produced.
Because we are a social enterprise, our objective is to give back to the community through a project that involves children (or low income families) learning about healthy food behaviours, cooking or gardening. We think this is the way to go!

Francoise is the owner and head cook at Malty & Hoppy Delicacy. A woman with a strong academic background in the area of human nutrition, Francoise has decided her time to make a dramatic change in her life, leaving her passion for good food and gastronomy to be the leading force into her professional life. Her objective is to bring culinary alchemy to the kitchen and a combination of delicious flavors to your table.
This new journey is a professional activity that can employ her creative and entrepreneurial mindset, where she can emphasise her love for good food with a commitment to our community and the environment.
Francoise has a passion for diversity in food, where it comes from, how it tastes and how our food choices affect the rest of the world. Francoise has always cooked, trained by her two grandmothers who were both exceptional cooks, and has also had cooking experience with friends from all around the world. She love to redefine French cooking with an international twist by adding ethnic flavors to her recipes.
Francoise founded Malty and Hoppy Delicacy because she has a passion for wine, and local craft beer is her "new wine" here in Canada. She also has a passion for cheese, charcuterie, vegetables and fruit, and is determined to bring them together in a wonderful new way. When Francoise takes a taste of her favorite beer jelly flavor, “Black Oak 10 Bitter Years Imperial IPA” with some Canadian blue cheese and cheddar, or some French Brillat-Savarin cheese, she is transported back to France, where she can once again live the experience of enjoying an excellent glass of booze with a selection of artisan cheeses. The gustative pleasures are of a great likeness!
Fay is a junior graphic designer from Centennial College, who is fascinated by cool designs. These days she spends her time investigating the details the typography filed, where she would also like to spend more time exploring the Chinese characters. Usually her ideas stem from daily life; Fay’s inspiration is evoked by just looking at other graphic designers’ professional art. This helps improve her talent and areas of expertise. In her personal work, she uses a lot of soft colours and round shapes, which refer to her personality as gentle and easy to get along with. Although Fay loves to use patterns in her works, she also wants to keep everything simple. For the first project with Malty and Hoppy Delicacy, Fay has spent a lot of time designing the logo. She has tried different combinations: using the letters “M&H” only, combining the words and figures together, and finally by simply tracing the barley and hops contour as the final symbol. She has found designing the website main page and the packaging of the jelly and glazed peanuts quite easy when compared to the logo design. She has not used any fancy decorations, especially for the website; Fay wanted to keep everything simple.
